I am considering building a niche above the countertop, 60cm wide, 60cm high, 26cm deep. (where the lamp and outlet are) What is the best way to remove part of the wall without causing too much damage? Behind the wall is a pantry and the wall is not load-bearing, and the electricity is easy to move.

Not 100% sure about the idea, maybe it's too difficult and expensive. The idea was, since I don't have upper cabinets, to have my plates and glasses there.

Install an overhead cabinet instead and use the electricity going to the lamp to power the lighting under the cabinet. Or just a shelf on the wall.
 
How thick is the wall? Will there really be room for a 26 cm deep niche?

The wall is about 10cm, but behind it is a pantry that I will use to get extra depth on the niche.
