Isn't it possible to grind and polish the marble countertops? That would look much nicer. Decorative plastic will unfortunately look like just plastic, and at the corners where the plastic has to be folded, it will never look good.
I understand that it costs more because you probably have to remove the countertop and follow-up restoration costs, but take one countertop a month and then paint/wallpaper the room.
As for whether the plastic damages the stone (which was your real question), I don't dare to answer.

I removed some white plastic that the previous owners had put on my marble windowsills, they were really nice underneath. They probably put the plastic there because they wanted white windowsills... I didn't think the white looked nice. Now I am satisfied. No damage to mine from the plastic anyway. Genuine Marble from '53 is nicer than fake 
OK yes, it was probably a cost issue that played a role here. I was thinking of replacing all Estremoz marble window sills with Bianco Carrara before (we live in a house with up to 20 window sills), but it became much more expensive than the decorative plastic (and what should we do with the old replaced Estremoz window sills? Keep them?) That's why we thought about the option where we both save money and preserve the old valuable marble stones and refresh the appearance (maybe it will be a worse result than real Bianco Carrara but the cost played a role here). Maybe after a few years when we get tired of the Carrara plastic, we will remove the plastic again now that we have confirmed that the marble will not take damage from the decorative plastic.
