I have had a dozen boards delivered to my home by a local building materials dealer. These are to be used for fascia boards and are expressly ordered for this purpose.
Most of them look okay to me as an amateur carpenter. But some boards are like a bow with a 2-3cm difference in the middle over about 5m length, and some are a bit twisted like a "screw" with a similar difference, and there are cracks from the ends that are a few decimeters on some boards.
How crooked, warped, and cracked should one accept the boards to be? Are there different quality levels?

I always get a number of warped lumber when I order larger quantities that are delivered to my home. I have started to not accept them at all, instead sending them back or taking them there and exchanging them for straight ones. There hasn't been a problem with the exchange itself, it's just strange that they send such things at all. Though, in the builder's defense, some are bundled so you don't see it's warped until you cut the cable ties. But apparently, you have to go and pick up the lumber yourself to avoid such scrap wood, it's not good for anything useful.

2-3 cm over 5 meters? What is there to argue about? Leave a spruce board in the sun for an hour and you'll see!
Of course, there are different classes. You get what you pay for. But even premium wood can be ruined if treated improperly.
Choosing yourself is obviously best, as Jan-Å stated, but don't be horrified if it's a little twisted, as long as there aren't too many knots.
If the ends have cracked, it has probably been dried incorrectly. If it's poor quality wood, you shouldn't pay for premium!
It's always worth pointing out deficiencies. But wood is wood! Living material.
