Currently building a conservatory, and in the conservatory, we will have our hot tub (at least in the winter). As you understand, there will be a lot of steam, and the builders suggest that we need something to protect the walls from moisture. The only suggestions they had were either wet room wallpaper or tiling. Neither of these appealed to me, so now I’m wondering if you have any other ideas on what can be done and what to use. I suggested using outdoor plasterboard, but apparently, that wouldn't work so well.

So it's a portable hot tub? Do you have any sketches of what the patio room will look like?
It sounds a bit like it has to be constructed like a bathroom to avoid getting moisture damage and rotting immediately.
