I've just created a larger opening in a thick wall. At the same time, we've installed pre-painted paneling from floor to ceiling in the hallway. Now I'm wondering the best way to cover the inside of the opening. The width of the material needs to be 210 mm to cover studs and paneling. What is the best material to use? Is there pre-painted material available in 210mm width? Around the opening, we are planning pre-painted traditional molding.

I have not seen anything pre-painted in 210mm width. I would take MDF, cut to 210mm, and cover with it. Then sand the edges slightly to create a light rounding. Then putty the nail heads and paint. If you want it spray-painted, you'll need to send it for lacquering and then try to glue them up to avoid visible nails.

Personally, I prefer wood over MDF. Wood is wood, you know.
I would go for MDF, easy to work with. Unfortunately, it creates a lot of dust, and the dust gets as slippery as ice.
Also says MDF. It becomes extra good if you take a router and mill the corner with e.g. a 10mm radius. Or since you were going for an almoge style, possibly a milled edge with a bit more "track".
