We are going to install a staircase and have received help with the hole cutting and offsetting. How would you deal with these parts, how can you cover it in an attractive way without making the hole significantly smaller or having an ugly edge at the laminated timber beam that aligns with the studs?

It will require new plaster. If you are skilled, it can blend with the old plaster. Fill, paint.
