:D I have a house built in '67, in the bedroom and living room we have stretched paper ceilings and Tretex boards on the walls. Behind the Tretex, there are tongued wooden boards throughout the house.
What is best, installing gypsum on both the ceiling and walls? since we want to tear down the old, or are there better materials available?

With gypsum, it's easy and fast, tretex can smooth out irregularities in the wall since it is quite porous, keep that in mind before you potentially remove it. There is also 6mm gypsum that doesn't add much if you just want a new smooth surface.
