I have a few bottles of construction adhesive (mainly PL400) that are unopened and are approaching their EXP date soon, and I was wondering if you have any experience with freezing them to thaw and use the adhesive later? Would that work?

Tec7, for example, can, according to the manufacturer, be frozen and thawed several times without losing its properties, so it absolutely does. Whether it extends the expiration date, I'll leave unsaid.
