I'm about to build some walls in the boiler room, I've bought 70 metal studs and tracks that will be covered with OSB and drywall. But on one wall, there will only be boards on one side, meaning drywall, OSB, metal studs with insulation. What I'm wondering now is how to do this in the best way? Do you set double studs so that they form an H to place the insulation in? Or should you put an "intermediate track" for the insulation board? Or should you go ahead as usual?

Keep going as usual...
Metal sheeting can sometimes feel a bit flimsy, but I promise it will be stable and good.... As long as it's not a load-bearing wall, you can safely proceed as usual...

buy the self-drilling screws, like 14 mm... so you can fix the metal tracks best...

no risk that the insulation board "slides out" when there are no boards on both sides?
