I'm going to close off an exterior door on my house. How thick should the insulation be, and in what order should everything be done, for example, should I have plastic against moisture? What should I have on the outside? Wood paneling, wind barrier, etc.?

If you have more than 150 mm of insulation, you can place the plastic 45 mm in from the inside. This way, you avoid nailing through it every time you want to put up a shelf. But it might depend a bit on where the plastic is located around?
 
It is usually said that the plastic should be placed on the inner 1/3 of the insulation's total thickness.

Then it depends on how the house is constructed overall, is it a new/old house, is there plastic in the rest of the construction? How much insulation you have depends on how thick the wall is of course, you can't have more insulation than there is room for :) and it's not good to just have the wall half-full with insulation either ;)

The house is otherwise in plaster, with a wooden frame, don't think there is any plastic now.
Adding insulation and putting wooden paneling on it.
