Hello!

Considering how to proceed with renovating a room - in this case, a bathroom - when you want the walls to be as flat/straight as possible to make later tasks like tiling easier. If the studs are not aligned with each other or are warped, what methods are there to correct the problem? Replace the stud entirely, add thin strips of some sheet material/list to get the right thickness, sand down any "excess"... what are your experiences?
 
If you want it absolutely straight and flat, then metal studs are the way to go in my opinion. Wood is a living material and therefore not 100% straight and flat.

If there are only a few studs causing bumps, you can plane them down with an electric planer and take the last bit at the ends with a sharp chisel. If the studs are very uneven, it might be easier to shim them with masonite strips or thin battens in the "dips."

If it's new construction, metal studs are preferable, just as mats_o says.
