If the mortar freezes, it will not turn out well. If it's on the verge, you can store the stones indoors to keep them warm and then cover the masonry. There are also frost protectors to add to the mortar.
The burning time increases for the mortar, and the strength growth stops or decreases significantly. That's why you shouldn't lay bricks below 5 degrees Celsius. You can ensure some shelter and slight warmth where you're working if possible, while also mixing the mortar with warm water. However, there's a risk your structure may become weak if it's too cold. Absolutely no freezing temperatures.
