I'm thinking of starting my questioning career here with an amateur question so you know what level my knowledge is at. 
I have an old doorway I want to brick up and I'm wondering how to "anchor" the new brickwork or if it's needed at all? The hole is now a neat rectangle and I'm wondering if I should drill rebar into the sides that then go a bit into the new mortar, one or two pieces typically on each side.
Or is it such that the new brickwork simply adheres to the old one and that's that? The existing wall is made of lecablock, and that's what I'm going to use to brick up the hole.

Isn't it common to place crampons on every other row, which can be attached to the existing wall?
Otherwise, I think, as you write, using the rebar seems good.

Rebar is a bit overkill, but otherwise it's enough to smear mortar on the sides of the stone, against the existing wall. If you want to do it thoroughly, you can use an adhesive that makes the mortar adhere better to the old surface, Maxit has a good one.
