I would like to cover the walls of a room that will become a studio with sheets of material where I can pin drawings, sketches, etc. with simple pins, so a relatively porous material. But it should be paintable. What should I choose?

Treetex. Glue it to the surface (chipboard/OSB/gypsum) with mounting adhesive and wallpaper the entire area with a textile wallpaper.

Isn't regular plaster a perfectly excellent choice in this case?

Isn't plaster a bit too hard for that? I can't imagine one being able to easily stick a regular needle into a plasterboard.

What I spontaneously think of are sound absorbers that are usually used in offices and the like. But it might be way too expensive. (Check out http://www.bullerbekamparen.se/ for examples) However, I'm a bit unsure about how durable it would be for downward tension, but they should be able to handle drawings.
