In my summer house, I have a deck on piers under a roof. It's now going to be insulated and enclosed with glass. Under the old decking, there's about 40 cm of coarse crushed stone. The new floor joists will end up about 10-15 cm above the stone layer. Is that OK, or is there a risk that early summer warm air might condense against the crushed stone? Or is it better to remove the stone (heavy)?

Why carry it away, there will be air underneath and ventilation, just have it open on the sides so the wind blows underneath

When the air has free access to the space, there are no risks. When the air's water vapor condenses against the blast stone, it can only run downwards.
