Here's what we did
Brought in a chimney sweep for advice beforehand.
Rendered the chimney breast completely vertical, but quite rough, with lime plaster and then glued up gypsum board with Ardex S48, waterproofing, and tiles.

Just regular 13mm
When the inspector was on site, he didn't know if it was okay, but he came back and also wrote in the report/protocol that it was allowed but regular paper-coated for fire safety reasons.
Our tiler also wanted regular paper-coated as he said the membrane sticks better to it than to moisture-resistant gypsum board with fiberglass mesh.
 
Talked to the chimney sweep today who suggested we should plaster the chimney and tile directly on it. Nice

How do you handle the moisture barrier on this wall? I was thinking of using foil for the rest of the room but can you combine rolled and foil or what do you think is the smartest approach?

Just because you can go without foil doesn't mean you have to. I'm not really the one you should listen to too much, but I would see foil as the only option here. You might need to change the glue or choose the right glue to work everywhere, it's a bit of a jungle of products and options ;)
