What is this called in Sweden and where can one obtain it?
I've visited all the local hardware stores, but the only thing I find is some rough type of construction plywood that doesn't exactly inspire creativity.
I'm looking for 12, 15 (16), and 19mm.

Baltic Birch is birch... Simply birch plywood..
There is really nice knot-free birch plywood at, for example, Sigvard Spångberg and surely it should also be available up in the Norrland forests..

And considering the price, it's easy to look at MDF instead. I'm in the same situation, I usually check in at the sawmill in the hardware store every time I'm there, buy leftover pieces and stock up.

Please let us know more about the quality once you've received the delivery. I'm planning to start on a bench for the miter saw soon, and I'm thinking of making it with 18 mm plywood.

The plywood is very high quality, smooth and nice on both sides.
The quality was B/BB, which means one side has knot repairs with a maximum diameter of around 15 mm and the other side can have a maximum diameter of 50 mm (measurements taken from memory when ordered, could be wrong).
The knot repairs are so well done that you don't notice them until a more thorough inspection.
My sheets were dented in a corner so some layers separated there, but I got a good discount for this.
