I am going to install some studs with 2"3 and I'm wondering what is the easiest way to attach these to the old wall. Nailing is possible, but it would require long nails and nailing into old rock-hard timber walls from the 20s seems like it will result in a lot of swearing and bent nails... But how long do they need to be? 6x120/140 seem to be the most suitable, right? And how many in each stud with a length of about 2.5 m?

I would have used 6x120 mm and I would have pre-drilled the hole with a 6 mm drill through the new 2x3 so that the threads are free all the way.
If you screw every 60 cm, it should count, meaning about 5 per rule.
If you have to straighten the wall, I would go up to 6x140 mm.

When you frame out from an old wall, the normal practice is to build a new frame around it and then attach the studs to the frame. This way, all framed walls look and function excellently. This also ensures it is straight without trying to insert something between the old wall.
