I'm in the process of demolishing the kitchen and started chipping away the adhesive on the wall where tiles were installed. After a while, I realized that there was an even older adhesive behind the newer one. I sent a sample of the material for analysis, and it turned out to be asbestos (anthophyllite). So, in addition to the immense anxiety about having inhaled the stuff and spread it throughout the apartment, I now face the challenge of how to deal with this next. I have to even out the wall somehow. Do you have any tips on how I should proceed?

Since you are worried and have confirmed asbestos, I would suggest a remediation company that completes and cleans up.
 
Done is done, nothing to worry about. Wipe the apartment clean with a damp cloth and it will be fine.
Then maybe you can put up 45x45-reglar, osb, and plasterboard? It's probably the easiest way to avoid disturbing the asbestos more.
