It also feels stupid that you have to pay for two layers, first plywood and then gypsum, there should just be one layer that solves everything, we don't live in the Stone Age...

Same here, I hate joint filling. So it'll be paneling in the guest house on the long walls. The short walls have only 1 joint, so they'll get plasterboard, but that's something to deal with.. :) there's OSB behind everything.
 
Why not then hire a painter to sand and putty if that's what you want to avoid?

Indeed it does. But sometimes you have to recognize your limitations. My partner and I have done pretty much everything ourselves when we extended our house, but we chose to buy ready-made trusses instead of building them ourselves (185kg each).

In my house, there are 12mm chipboards, no plasterboard. Joints with filler and fiberglass though.
 
I don't know if it's feasible, but can't you spray on plaster directly onto the wall? Plaster can be applied almost as thick as you want, so 12mm equivalent to a board shouldn't be a problem. Now the actual labor effort would definitely exceed just filling seams, but if it's the seam filling that absolutely needs to go, then maybe... ;)
 
Walls2paint solves your problems.

That board looked nice :) but it feels like the seam will show or does the color cover it, perhaps?
