Is there any other alternative to plaster?
For example, can you put plywood on the wall and then apply wallpaper directly on it?

No. I don't think you want wallpaper on plywood/wood since it has a greater risk of moving. You need something inorganic.

There are many summer cottages with masonite on the walls instead of gypsum.

Yes, there are harder boards for e.g. wet rooms.
 
There must be a reason to use something else.
Cheaper material? Difficult since gypsum is among the cheapest you can find.
Better for the purpose? Also difficult if you are going to wallpaper, as gypsum is inert and doesn't move.
Humid environment? Yes, there are better alternatives, but in such environments, you seldom want to wallpaper either.
For building conservation purposes? Yes, that could be a reason.

But come on. Give back a little and tell why you don't want plaster. Or, you haven't said you don't want it, but one gets a feeling that this is the case. It would be interesting to know.
