I want to build a trellis as an interior design feature. Slats, about 70mm wide, from floor to ceiling, i.e., around 240cm long. They will stand individually, with a few centimeters gap between them. I want it to be straight, of course, but wood tends to warp, so which type of wood is best to use? I have seen that you can buy ready-made ones, but they are CRAZY expensive, and it's fun to tinker yourself.

Tips on wood types, dimensions, whatever might be good to know are gratefully received.

There is a reason for the price of ready-made trellises. You need furniture-dry wood that you plane to the desired dimension after letting it sit at home and acclimate for a few weeks.

The type of wood depends on your preference for appearance, but it also depends on what you can find in those lengths. It could be pine, oak, perhaps ash or beech.
