Window recess 112.5 mm?

Follow-up question to the previous one, if I put plaster on the walls in the room I'm renovating, I need to replace the window jambs with those measuring 112.5 mm.

125 mm seems to be the closest option?

Can I buy those and cut them, or will I find the right size if I search a bit more

You can cut them. I've been through the same thing.
So just bring out the table saw

Yes, you can trim them to the right size, unless you add a cladding molding to the old window framing instead.
