Which drywall anchors should I use?

Excuse my ignorance, but I can't quite wrap my head around this whole wall plug thing.
I need to mount two things. A small coat rack (requires M5 screws) and two IKEA wall shelves of the Bergshult / Sandshult type (unclear diameter as IKEA doesn't specify such things). Neither will hold hundreds of kilos, more like a maximum of 15, but I still want them to be secure.
So, the ever-recurring question: What plugs/screws should I use for this? I've used universal plugs before and didn't feel they held all that well. Nothing collapsed, but they weren't entirely secure if you touched the shelf.
Molly seems to be the only right choice, but I previously bought some in diameter M6 (6D is marked on the package) and they are absolutely huge. The screws feel considerably larger than the 0.8 mm difference between M5 and M6 should be. Is there another scale for molly or do I just have bad judgment of size?
And another thing: The coat rack requires countersunk screws. These don't seem to exist at all for molly plugs. Or do they? Can someone point me in the right direction? What exactly should I buy to make it secure, safe, and as simple as possible?

Ah, is it that simple? I don't have much detailed knowledge about molly. But any screw will work as long as it has the same diameter and is longer than the plug?E etompau said:

The screw should have the same thread, then any screw will fit the wall part. There are actually screws with different threads but with the same diameter. So an M5 screw in a wall part for M5, etc. There are also other models/brands than Molly, even though they are big. A small (or sometimes large) issue with Molly is the day you want to remove the shelf or whatever you have mounted. Then there is a metal piece in the wall that is difficult and sometimes maybe impossible to remove without causing significant damage to the wall.D danielwerner86 said:
D’et should also indicate that it is for double plasterboard; if it is only a single board, it will not hold very well.
