What plaster should I use?

I need to repair some old walls on a stable. It's single brick with plaster and on top of that is a wood facade. Some bricks are coming loose and the facade needs to be replaced.

But what should I plaster with, it doesn't need to look nice (since it won't be visible anyway), but it should be strong.

Do you really need to plaster?
Isn't it enough to just cement the loose stones?

It might be enough to cement the loose stones in place, but I thought that it would provide better durability by giving it a bit of finishing.
