Logically, you should run all the electrical and such first... Then cover with the ceiling and walls... (the carpenter suggested it was easier to install the ceiling before the wall panels)

But... I don't currently know where the lighting and such should be placed... Should I stop the project... or go for surface-mounted cables?

Or route out grooves afterward in the drywall and run the cables there... or let them install the ceiling but leave an open groove just wide enough for the light cables, then just fill over it...

Ugh, I'm going crazy, I want to get it done but have so much anxiety about where all the electrical should go... want to go with intuition... but without ugly exposed cabling...
 
Place light sockets on the wall and then you can press a cable conduit to where you want the lamp, it's not harder than that. Chasing and spackling is just a heck of a job. Or place two ceiling boxes where you feel you might want a lamp. A white box cover isn't that unsightly if you change your mind.

Actually, I forgot to mention that this was out in the garage, the future laundry room, and hobby room.

I'm planning to install fluorescent light fixtures, but I won't know where until all the interior furnishings and heating system are in place. But to get them set up, all the panels need to be up on the walls and ceiling...

I would have preferred a detachable ceiling, so one could lift and fix whenever they felt like it, but that would probably be super expensive compared to just putting up some drywall...
 
I would have stopped the project for a day or two and take a long consideration on how and where you want your lights/outlets.

You should already have a clear picture of how you want it in your garage and then you set the outlets according to that. Sure, it may not be 100% perfect, but it's much less work than cutting into the drywall afterwards.
 
No, don't cut into drywall and run conduit inside.

You insulate the walls and add building plastic to that, then attach 45x45 studs laid flat on top of it (for the exterior walls). There you lay the conduit and install boxes, etc. After that, put on the panels. At the locations for fluorescent fixtures, make an outlet in the drywall and run the conduit out there.

what kind of nonsense is that. as clear as broth that ALL the electricity is pulled before you cover walls and ceilings. your carpenter probably wants to avoid measuring the holes for the boxes.
