My plan is to open up all the way, my question is how far up should one insulate, can you insulate all the way up or should you leave a bit from the ridge and install gable ventilation in the small attic space that will then be created, I have fixed an air gap along the entire roof and was planning to fix ventilation in the eaves.
 
You can make sure to vent at the ridge as well instead of using vents. What would you gain from that little cold attic, I wonder?
 
This is one of those funny questions where many people have very certain opinions that differ greatly. I know from experience because we have done this.

I suggest you do a little googling on parallel roofs, as this construction is called, and try to form your own opinion on how you should do it.

We created an air gap closest to the outer roof (even though some say it is not needed) and ventilated towards it on the long sides of the roof. Otherwise, it's sealed. We installed 400-500 mm of insulation.
 
I have been googling a bit about parallel roofs but unfortunately am not much wiser on them, how do you fix ridge ventilation on a cement roof??
 
Have been looking into how to fix ridge ventilation on the asbestos cement roof and what I've come up with is that you can drill holes in the ridge board, would this work or??
 
If you have roof trusses with collar ties, keep in mind that the underlayment is part of the construction. If you remove the underlayment, you should/must also reinforce the collar ties to stiffen them laterally. When the load comes, the underlayment normally ensures that the collar tie does not bend.
