Hello,
Do all plaster walls have OSB boards behind the plasterboard in today's houses/apartments built after around 2010?

I was thinking instead of finding the studs when drilling something up, can you then drill anywhere if there is an OSB board behind.

No, just drywall is still common. If there is OSB, you can attach most common things directly to it; really heavy items may need more.

Unfortunately not, it is still common to have single or double plasterboard in walls.

So test drill where you are going to put something up and see what is hiding behind there.
