What is the difference between the plaster sold at Byggmax and the one sold at the local lumber yard? At Cheapy, for example, they have Danogips GDS board, but what is the difference between that and "regular" boards?
I need 900-wide boards. Is there any brand/seller that should absolutely be avoided because they are of poorer quality or break more easily during handling?

At Tex Byggmax, a budget board is sold that even they themselves think is junk. Stay away from it.
However, if you buy boards from the major manufacturers like Danogips, Norgips, Lafarge, etc., there is practically very little difference between them (none). Byggmax sells Lafarge, if I remember correctly.
