Some make all the wall studs equal in length, while others let them go all the way up to the roof in the gables. The first one seems simpler, but which is preferable?

If you follow the first principle, you can use a truss at the outermost part and place it on top of the wall, then cover it with cladding or whatever facade material you wish to use. I don't know if this is what you had in mind when you asked your question, but this method is very common when manufacturing single-story prefab houses.
 
What you need to consider if you choose option 1 is that you must have something else to attach the ceiling to on the gable. If you choose option 2, you can attach the ceiling to the first truss; it is not more difficult to build according to option 2 as you set up the truss first and then raise the studs on the gable against the truss and nail them in place. You also don't get a thermal bridge in the form of a wall plate on the gables.
 
Thank you both, if you go with option 2, how do you handle the hammarband and bärlina then? Is there still a hammarband at the top and how is it connected with the long walls?

The ridge beam runs diagonally along the top edge of the roof truss. You can make the carrying beam as an inset in the beam where you want it.
 
There is no need for a wall plate on the gables if you go with option 2, you attach the studs to the roof truss.

I'm not sure I agree with you on that point. You're right that it's not needed to attach the studs, but when you're installing the wind protection, you have to have it. Exterior gypsum is usually installed with screws/nails c/c 200 on the edges, and windproofing fabric is stapled with c/c 100 mm, and this won't be easy to achieve if you don't have a wall plate at the top of the wall to attach to.
