I will install some new studs in the kitchen as part of a renovation. New drywall needs to go up in certain areas. I discovered that old studs from -75 are 50 mm thick. I have bought 45 mm myself. How do I get the same 'height' now?? The drywall can't just bulge in and out here and there

Buy a 4mm plyfa and put strips on the regulations.
Either you can place something behind that is 5mm. For example, Byggmax vinyl click is 4.5 mm if you want to cut strips of it. Another option that might be better if you have uneven walls is to screw the battens with frame screws which makes it easy to adjust.
