I hope there's someone out there who has some ideas on how I should proceed with the following:

Like so many others, I have stairs covered with linoleum and stair noses covered with a black PVC strip. Now I plan to remove the strip and then cover the stairs with laminate. Since the stair strip is slightly angled/beveled, this will be covered with a planed molding list (56x12 mm planed to 7 mm thickness). Now to my dilemma (according to the attached image), there will be a triangular space between the stair nose and the list. How do you solve this? Should one try to make a fitting piece that fits in the space so that you don't break the list as soon as you start, or how would you other carpentry-skilled persons out there solve this?

Red color = laminate
Blue color = stair nose list
Green color = possible fitting piece

Glue on a piece of wood with the right thickness, then use a router or saw along the plan step. You can use the first piece as a template if you have a ripping saw or a router with an adjustable base plate.
 
Hmm, let me see if I've understood you correctly - Do you mean to glue the blue piece to the laminate and then mill/saw it down to the correct profile? (see attached sketch). Before and after diagram: Top image shows a blue piece attached to a red laminate edge. Bottom image shows the blue piece trimmed to fit the red profile.

Nah, not quite. I'm thinking like this.

I have a plunge saw that should work for cutting, I can probably borrow a router too, but how do you reach into the corners? Or do you have to use a chisel/grinder for the last bit towards the? attaching picture of the stairs.

You only need to make a 30cm piece in the middle to get a template, then you use it for mass production.
If you have a plunge saw it's easily solved: attach the piece in the middle of the stairs and cut off, then you have a wedge that shows what angle to cut the plank at :)
 
Good thing there are people out there who can think a bit further than oneself :D

Thanks for the tip, I'll probably let a local carpenter take care of the planed filler pieces (the same as planing down the trim).
