We have very thin walls in our townhouse in Spain. I believe the wall is made of hollow brick. Would it help to put up double layers of drywall on our side? Can the hollow bricks be filled with some material to improve sound insulation (there are a lot of holes to fill in that case)? Or do we need to put up another wall with a small gap against the old wall? We are short on space so there might not be room for an additional wall a few centimeters inside the old one…

The more you can spare, the better of course. All types of free-standing walls will make a significant difference in everything except structural noise.
But you'll probably have to sacrifice at least 8cm. Sure, you can apply the drywall layers directly onto the hollow block, but it won't provide the same soundproofing benefit.
