If I want to build a non-load-bearing partition wall with fairly good sound insulation, can I use OSB+gypsum on a 45mm metal stud in a double stud wall construction, or is a standard 45x70mm wood stud better? I'm also considering 45mm insulation on one side.

Looks good.
There is no significant difference in soundproofing between wood and metal studs in your construction.
If you want to improve soundproofing, you should use double drywall!

I am aiming for a wall that dampens 50dB, do you think I am close?

Background. I live in an apartment with poor soundproofing. It's not fun to use the bathroom when we have guests and buses and trucks are constantly passing by outside.
The future: We are meeting with the bank regarding a loan promise in just under two weeks. The idea is to either buy a small house and extend it, or buy a suitable house and renovate it room by room. In preparation for this, I am gathering as much knowledge as I can to avoid the "what if we had done it differently" scenario. I have understood that a normal conversation is around 70dB and personally find it pleasant when the noise is at most 20dB, 70-20=50.

Does anyone have the answer to how much worse it gets with OSB + plasterboard on both sides compared to double plasterboard on both sides?
Like Apprentice, I'm sitting and planning for the future, too. But honestly, I'm not really keen on the construction with double plasterboard compared to OSB + plasterboard.

I find some difficult-to-interpret info on Gyproc's website, but nothing about OSB.
