Between here we will build an interior wall, and on each side of the walls, an 11-year-old boy and a 13-year-old girl will live. So it needs a bit of soundproofing to prevent any new world wars from starting... What's the best way to do it? Are we thinking correctly if we plan to frame with 45x90 studs and insulate with something (what?!), then add OSB and gypsum? Is there anything else we should consider? Are we completely off track?

Keep in mind that any gaps at all the connections of the partition wall to the existing construction are very good sound transmitters. Plenty of some sealant under the studs, especially in the ceiling, doesn't seem to be wrong.

Use a steel stud and seal strip against the floor, wall, and ceiling.
Double gypsum board on both sides and insulation.
Add a soft sealant when you have finished applying the gypsum board.
A 70 stud is sufficient.
 
Or you can brace 2 separate 45x45 or 45x70 walls with gaps and rock wool in between. OSB + gypsum I think is good so you have something to screw into. Seal thoroughly in all gaps
