How careful do you need to be at the ridge where the tongue and groove from both sides meet? Do I need to miter the long sides, or is it enough to saw straight - there would be a small gap in the middle, but maybe that's not a big deal?

Then you should have a ridge plate at the top. The ones you buy at stores are, in my opinion, a bit too thin, covering only about 20 cm. For my part, the metalworker bent it to 35 cm to prevent water from blowing up under the ridge.
A tip if it's a trapezoidal sheet: at the top under the ridge at the end of the sheet, take pliers and bend up the part that is (in the valley) the lowest a bit; this will create a stop for water blowing up. My metalworker said it's the best thing to do if the roof slope isn't great. I have a good slope but did it anyway.
