I have an older house with a plaster layer on the wall, according to an old model, behind various layers of wallpaper. During ongoing renovations, a couple of larger chunks have come loose and I plan to apply new plaster to fill in before applying a new surface layer. What type of plaster or mortar should I use?

Probably, the old plaster is some form of lime plaster.
In that case, it is appropriate to use a corresponding type, possibly with a little cement mixed in.
That is, plaster E or D (with cement).
