Raise the ceiling in an old stable

We need to remove the trusses in an old horse stable, how do we reinforce the building when the beams are removed without compromising the height we need to reach all the way to the walls to get an approved stable?
Can we reinforce with some steel construction from the inner walls up towards the trusses?

Can we reinforce with some steel construction from the inner walls up to the rafters?

Here, both pictures and a drawing would be needed. Removing rafters should never be done, but maybe you mean the floor beams?
