Put up a new ceiling, lower since the old ones are crooked how to frame let the old ones stay

Planning to install new ceiling joists since the old ones are warped, thinking of lowering the ceiling a bit and letting the old ones stay underneath, how to set up the joists and what size of timber? I'm going to put up Huntonit panels,
