Preparations for a new kitchen

I have a question, what is best to use on the walls in the kitchen? We have torn out the old kitchen and are now going to fix the walls where the old cabinets were. Should we re-drywall all the walls or is it enough to maybe use renovation wallpaper? Grateful for answers!

12 mm plywood (or OSB) and a 6 mm ROT-gips provide a good and durable base for installing a new kitchen.
