I want to attach a pipe/mast to the deck and would like the bracket to be articulated in at least one direction, but preferably two, like a universal joint.
Has anyone seen anything like this? Could it be available as a boat accessory?

Looked around a bit, unfortunately found nothing...
But you might be helped by the fact that such a connection is sometimes called a Polhemsknut when it's not on a car.
A mechanical workshop should be able to help you, but it will probably cost a bit.

Doesn't have to be expensive at all to have something similar made if you can't settle for just a universal joint from the scrapyard with some welding work from a friend with a welder.
An idea for another solution is 2 hinges joined together with a 90-degree difference.

Use a ball the size of a tennis ball. Drill two holes in two iron plates that the ball then runs in. Weld a mount on the ball for the mast. Secure by tightening bolts between the plates. When you want to set a new angle, simply loosen the bolts.
