Should I use 18mm plywood on the wall in the attic and have it go directly up to the roof plastic, then place a stud outside of it so that the ceiling can be attached, or should I place the stud for the ceiling first and then attach the plywood to this stud?

It doesn't matter. Why should you use 18 mm plyfa? Normally, there is nothing indoors that is so heavy that 18 mm is needed.

Hehe was going to buy OSB for the wall but then I stumbled upon 15 pieces of 120x240 18mm plywood for 100kr 😃
