I have a house today that was built in 2023, the whole house has an air and vapor barrier installed. The house is 2 stories, and in the intermediate floor, it is also sealed with plastic. This summer I plan to furnish my inner floor, i.e., frame and all that it entails with walls and ceiling. When I install the ceiling on the second floor, does it need to be sealed with plastic there, or can it be skipped and just have insulation in the ceiling between the second floor and the "attic"?

You only need to have plastic against the construction part that borders the outside air.
