I am going to install a stove, have relined the chimney, and now need to open the hole for the stove, and after having removed the wallpaper, some of the plaster was very loose so I removed it and reached the chimney breast, my question is more aesthetic.

Should I just remove the loose plaster (it's not all of it) and apply new plaster where I've removed the old one, or should I apply plaster and tiles on the wall, or should I remove all the plaster on the wall and go with the actually quite nice old raw style with visible bricks :)
