I have done a bathroom renovation in the basement. However, we skipped the ceiling since the contractor wanted an exorbitant amount to fix it (12500 after rot). Therefore, I'm going to attempt to make it look nice myself. But what material would you use? It's currently a painted concrete ceiling that is very uneven. I was thinking of trying to polish/level it and sand it smooth. Would you sand off the paint or apply plaster directly over it? There are a plethora of fillers and plasters available.
Absolutely the best plaster I've worked with (which admittedly doesn't say much) is ardex a950. It can be nicely spread with a spatula or applied with a trowel, dries quickly, and doesn't shrink.

Plastering a ceiling after the bathroom is already finished is a bit crazy! Completely the wrong order. I think you can forget about plastering the ceiling; plastering could work... if you're experienced... otherwise, I would probably hire someone. Partly because it's a lot of work, and partly because it's hard to do it well if you're inexperienced, and if you're inexperienced, more plaster usually ends up everywhere except on the ceiling. And yes, the paint probably needs to be sanded off first. And if the bathroom is otherwise finished, everything must be covered properly beforehand. Then I don't think 12,500:- was too expensive to fix an uneven ceiling.

It's perfectly fine to glue plasterboards with adhesive mortar; it builds minimally and becomes smooth. You apply the adhesive in the same way as when laying tiles, except that it's a bigger "tile." If the bathroom isn't too large and you're careful with cutting the boards beforehand, there may not be even a seam you need to fill before painting.
Gypsum a ceiling with your method is definitely not an accepted way! In my eyes, it's downright crazy. On walls, there is no problem, but hanging heavy drywall on a ceiling, only in adhesive, is insane, it's so stupid that I don't even bother to explain why! He is looking for a quick fix solution that builds as little as possible and can be fixed quickly. 6mm plasterboard and tile adhesive fulfill this.
