I would need to plane the edge of a three-meter-long and 21 mm thick board so that the angle becomes 45 degrees. How do you do it? A handy man with a sense of precision hand planes. But for the rest of us? Are there any tips, tricks, any machine or tool to use?

It's not particularly difficult if you take a little at a time.

Do you hold it 45 degrees freehand, or do you somehow set it to 45 degrees?

It's quite easy to work with 0°, 45°, and 90°.
It's something we have built into our brain.

The former technical manager at my job often said that you can see a 2° angle error with the naked eye, when it comes to horizontal and vertical, that is.
And 45° is simply halfway between horizontal and vertical :)

But of course, you should have a "template" with a 45° angle to check with while you train your eye.
 
If you have a circular saw, it's easy to get a 45 degree angle. Then it also depends on what you are going to do and how precise they need to be.
 
I would have chosen a table saw if available. Just tilt the blade and run it through, and it's done in 5 seconds. If you want a perfect finish on the surface, just go over it with sandpaper.
