Well, it probably depends entirely on how heavy the construction you plan to do is, how complicated it will be to attach the parts together, and how many people you have available.
It might certainly be quicker and easier to assemble certain structures on the ground than "on site," but if they become too heavy to handle, it's not a good idea.
However, if you have access to a construction team from an Amish community, then there's no problem even raising a barn wall. Most would probably choose to build them on site unless they have a crane.
