Do you think one should first erect the posts and then install the gables, or should the gables be assembled laying flat on the ground and then raise everything in one go?

Since a pergola is a simple structure without walls and a roof, you might need to describe in more detail what you are building and what you mean by the gables.

The bearing beams or the frame, where the roof is then attached.
 
Well, it probably depends entirely on how heavy the construction you plan to do is, how complicated it will be to attach the parts together, and how many people you have available.

It might certainly be quicker and easier to assemble certain structures on the ground than "on site," but if they become too heavy to handle, it's not a good idea.

However, if you have access to a construction team from an Amish community, then there's no problem even raising a barn wall. Most would probably choose to build them on site unless they have a crane.

I am part of the Amish community so we'll go with that option.
