Partition wall - panels up between the joists of the intermediate floor?
A lot of "Between" here... but I'm in the process of putting OSB boards on the partition walls and realizing that the tight nice walls between the rooms end up with a lot of gaping holes at the top edge in the gaps between the floor joists for the loft... I will of course put insulation between the joists and then put up ceiling panels that connect to the walls and seal with caulk etc., but it feels like it will be rather weak sound insulation? How is it usually done? I'm thinking about slapping an OSB board/drywall in the gap to ensure soundproofing?

You usually just nail the sill into the floor joists below and the wall plate into the ceiling and then don't do anything more. When you've insulated the floor joists, I hardly think the sound will propagate very much. Insulation is placed in interior walls precisely because you want to dampen noise. Once you've installed your ceiling panel and sealed it, sound probably won't travel that much that way anyway. Just make sure you're careful when connecting the wall to the floor joists below so you don't get sound transmission there.
if you plan to have a ceiling molding, you can leave a small gap between the drywall and the ceiling panel and apply an acoustic sealant there, which can further reduce sound transmission. However, in a single-family house, just having insulation in the wall and floor structure should be sufficient.
