Outdoor drywall on stud frame

Now I hope to get help with a question that I'm scratching my head about before I start with the framework on our vacation home.
If you look at this when he installs outdoor gypsum

, he installs the gypsum before the roof trusses are in place. What do you do on the long sides between the gypsum and the roof then at the eaves? Is it completely open at the roof trusses up towards the roof with just outer paneling and insect netting in front? Or some other solution

It depends on how the house is supposed to look. Number of floors, what the eaves and attic look like. I assume you don't have construction drawings since you're asking?
