I am going to buy new oak countertops for my kitchen, 40 mm thick. I was planning to buy completely untreated ones and oil them myself. Is there anything specific I should consider? How many times should I oil them? Should I let them soak in oil for a couple of days even?

Oil them soaking wet with half paraffin oil/half balsam turpentine the first time. Let it sit wet for an hour. Wipe off.rudivoller said:

Then use pure paraffin oil a couple of times over a month. Then once every six months or when the surface feels dull. As long as you use the countertop.
Do not let the oil sit wet for too long. It can create shiny spots.
If you want a slightly more rustic feel, boiled linseed oil (with turpentine) or Timbrex works well. Keep in mind that rags with boiled linseed oil can spontaneously ignite! Soak them in water.
Thank you for your response! I googled around a bit more yesterday and understand that oil and kitchen countertops are a debated area. But paraffin or linseed oil seems to be the way to go.
